Easy Breakfast Recipe: Fritatta


This Fritatta is a great way to break the monotony of your everyday boring egg routine and also get some delicious veggies in.

Below is my (Tyler 6 eggs) version for me and my wife (3 eggs) but this could easily be made larger for a big family. It keeps well in the fridge for a couple days as well if you are cooking for yourself.
You need:
-An oven proof frying pan
-9 eggs -1 red/green or yellow pepper diced
-1/2-1 cup mushrooms diced
-5oz light mozza cheese (optional)

Preheat your oven to 350F. Stir fry your veg for 3-5 mins. Whisk together your eggs in a bowl and grate your cheese. Add your eggs to the pan and top with your cheese. Place your pan in the center of your preheated oven and set your timer for 10 mins. When the time is up open the oven and give the pan a shake – if its wobbly you can continue to cook until solid. If its solid then take it out and portion up. I give Julie 1/3 and myself 2/3 (by weight but you could easily eye this out).
